A Healthier, Cheaper, Nut Bar

INGREDIENTS

1½ cups of mixed nuts (almonds, walnuts, cashews, pecans, macadamia)
1 cup of seeds (chia seeds, flax seeds, pumpkin seeds, sunflower seeds)
¼ cup of finely chopped raisins or dried fruit
3 tbsp honey
3 tbsp nut butter (almond or peanut)
3 tsp vanilla extract
sea salt
½ tsp cinnamon (optional)

DIRECTIONS

  1. Line a baking tin with parchment paper (or oiled tin foil). Preheat oven to 160°C/325°F (140°C/285°F fan).
  2. Mix all nuts, seeds, and dried fruit in a large bowl. Set aside.
  3. In a large saucepan over low heat, combine honey and nut butter. Stir until melted and well combined, may require adding a small amount of water, about 2 minutes. Remove from heat and stir in vanilla extract and salt.
  4. Pour the nut mixture over the honey mixture and stir well until all nuts and seeds are evenly coated.
  5. Press mixture firmly into prepared tin, ensuring it’s packed tightly and evenly. Bake for 15-20 minutes until lightly golden.
  6. Allow to cool completely in tin for 2 hours before cutting into bars. Store in an airtight container.
